The 24-year-old finished on top of the club's Best and Fairest count with 670 votes, making him one of only seven Demons to win the award on three or more occasions.
Christian Petracca (644 votes) was runner-up, with captain Max Gawn (542 votes) third.
Oliver averaged 32 disposals a game, while leading the league in contested possessions (434) and having the second-most clearances (186).
It adds to the former No.4 draft pick's already impressive list of 2021 honours, having earned a second All Australian blazer, the AFLCA Champion Player of the Year Award and a third-place finish in the Brownlow Medal count.
Senior coach Simon Goodwin said the result was fitting recognition for another stellar season.
"To be awarded the Best and Fairest in a premiership-winning side is an amazing honour, and Clayton should be very proud," he said.
"He has worked incredibly hard on his game over the past few seasons, so it's no coincidence that he is now getting reward for his efforts. His consistency and influence on the field is second-to-none."
Petracca, who took out last year's trophy, ranked first for inside 50s, fifth for contested possessions and 10th for disposals across the competition in season 2021.
The Norm Smith Medallist was a standout in the Demons' finals campaign, averaging 34 disposals in each of the three games while finishing the series with five goals.
He also earned himself a second All-Australian selection this season, as well as 23 Brownlow Medal votes.
Gawn registered 805 hit-outs and 114 clearances on his way to becoming a premiership captain and five-time All Australian.
Gawn's impact on the playing group was recognised with the 29-year-old receiving the Leadership Award from Goodwin.
