Mr Manikas, who also owns adventure company Absolute Outdoors, released the website for Grampians Peaks Walking Company on Wednesday.
"We are offering a new range of tours and services and plan to schedule the first guided walks for October," he said.
"We are offering everything that anyone would ever need to walk the Grampians Peaks Trail. The big focus will be the guided walking packages and tours.

"The 'luxe' tours are designed to not just walk the trail but to experience all areas of the Grampians.
"The 'luxe' tours spend time visiting wineries and products like the olive groves. This will give people an idea of what the region is like."
Grampians Peaks Walking Company will also offer transport and equipment rental for hikers planning to complete the trail self-guided.
"The trail definitely needs support from operators to make it more accessible for a wider range of people, and that's what we are here for," he said.
"It depends on the product, but at the moment the maximum group size will be 12 people."
Mr Manikas said the business had received positive feedback from the Halls Gap community and other tourism operators.
"I have had a few tourism operators reach out, wanting to collaborate with us," Mr Manikas said.
"We are really keen to talk with accommodation providers, activity providers, restaurants and anything we can build into the product.
"We are also offering $0 deposit for booking. People can book their place and not pay anything until much closer to the date, when it's confirmed to go ahead."
Mr Manikas said the COVID-19 restrictions forced Absolute Outdoors to close temporarily and move the retail shop to online.
"The biggest adjustment was coming up with a range of new policy and procedures for safety. We also transferred our shop to online within two weeks," he said.
"Once operations start again our team will have to expand pretty quickly ... we are very lucky to have a lot of qualified local guides.
"The goal is to be there to support anyone who wants to come and visit the Grampians and walking trail."
The Grampians Peaks Trail is scheduled to be completed in summer 2020/21.
