Paper Scissors Rock Beer Co. applied to the Northern Grampians Shire to lease part of the Halls Gap Hub to establish a microbrewery and cafe which will operate seven days a week.
In their application, the company wrote they will incorporate international street food, brewery tours, beer and food pairing events, produce tastings, brewing masterclasses, social events and local and national beer collaborations.
The core business will be the production of four to five signature craft beer varieties which will be available all year round.
The council gave public notice seeking expressions of interest to lease part of the Halls Gap Hub in early April.
Three formal submissions were made for the space and council officers selected Paper Scissors Rock Beer Co. as the preferred applicant.
NGS mayor Tony Driscoll said the microbrewery would complement the wineries in the region.
The application was discussed at a special council meeting on Monday.
The NGS will now consider any public submissions made about the microbrewery before making a formal decision.
